On May 5 to celebrate Cinco de Mayo in a fun and tasty way, Phillip Maestas and his wife Claudia Zarazua opened Taos Chicharron Burrito, a burreria located next to O’Reilly Auto Parts, on Paseo del Pueblo Sur.
“We had been selling our burritos during the Fiestas de Taos and Mother’s Day celebrations for many years,” said Maestas. “We would take the cart to Kit Carson Park and people always came to buy from us. They kept asking when we were going to be open all year around, so we finally decided to set up a permanent space.”

“We had a colorful and well-attended grand opening,” said Zarazua. “Many of our clients from Kit Carson Park came and brought in their friends, so we knew right away that the business would be successful. And we want to thank all of them for their support.”
Taos Chicharron Burrito’s specialty is, of course, the burrito de chicharron (regular or smothered, with pinto beans made fresh every day), but they also have ground beef, beans and cheese, sausage, bacon, chorizo, and chicken burritos.

"Picked up a Chorizo breakfast burrito for me and a bacon for my wife. They were both very good stuffed with either red or green chili, potatoes, eggs and the meat. I got mine with extra green chillies. Quite a good menu for a small for truck. Everything is fresh made and in the order placed so it takes a little time but worth it. As stated in another review it is not located where Yelp says. It is across from the Days Inn."

"First off if you aren't a local this place can be difficult to find based on yelp's map. It's across from the Super 8 motel and a little north on the west side of road. We were looking for a quick breakfast on our way out of town to Santa Fe. We had the breakfast burrito with chorizo, egg, green chilies, and potatoes. The size of the burrito is very large and they are made fresh to order. Definitely worth a stop for a quick breakfast."

"My review is for the bacon breakfast burrito with green chile and the sopapillas. The breakfast burrito was good, the bacon not overly thick. The green chile was not spicy, just added subtle flavor. The sopapillas were decent, however not as light and fluffy as Micheals Kitchen and the sauce provided tasted like butter, honey, and cotija cheese. I would have preferred just honey. The food was made fresh, so it takes a few minutes, but there is a number so you can call ahead. The food truck was very clean inside."
